1 lb fettuccine pasta
1/2 cup (1 stick) unsalted butter
1 small onion, finely chopped
1 green bell pepper, finely chopped
2 cloves garlic, minced
1 lb crawfish tails (cooked and peeled)
1 tsp Cajun seasoning (adjust to taste)
1/2 tsp black pepper
1/2 tsp paprika
1/4 tsp cayenne pepper (optional for more heat)
1 cup heavy cream
1 cup half-and-half
1 1/2 cups shredded cheddar cheese
1/2 cup grated Parmesan cheese
Salt to taste
Fresh parsley, chopped (for garnish)
Instructions
- Cook the fettuccine in salted boiling water until al dente. Drain and set aside.
- Melt butter in a large skillet over medium heat. Sauté onions and bell peppers until soft. Add garlic and cook for 1 more minute.
