Ingredients

8 ounces pasta (fettuccine, spaghetti, or your choice)

1 ripe avocado

1 cup fresh basil leaves

2 garlic cloves (1 for sauce, 1 for crispy topping)

2 tablespoons lemon juice

2 tablespoons olive oil

1/4 cup grated Parmesan cheese (optional)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup reserved pasta water


Instructions

1. Bring a pot of salted water to a boil and cook the pasta until al dente. Reserve 1/2 cup pasta water before draining.

2. In a blender, combine avocado, lemon juice, basil, 1 garlic clove, olive oil, some pasta water, salt, and pepper. Blend until smooth.

3. Thinly slice the remaining garlic. Heat a little olive oil in a pan and sautée until golden. Set aside.

4. Return the cooked pasta to the pot or a large bowl. Toss with the avocado sauce and Parmesan cheese (if using).

5. Top with crispy garlic slices and garnish with extra basil or Parmesan. Serve immediately.

Notes

Use ripe avocado only for a smooth and creamy texture.
