Ingredients
1 pound ground beef
12 ounces rotini pasta
1 cup heavy cream
1 tablespoon Cajun seasoning
1/2 cup diced red bell pepper
1/2 cup diced green bell pepper
1 small yellow onion, diced
3 cloves garlic, minced
1/2 cup grated Parmesan cheese
1 tablespoon olive oil
Salt and black pepper to taste
Instructions
1. Cook rotini pasta in salted boiling water according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water.
2. In a large skillet, heat olive oil over medium. Add onion and bell peppers and cook until soft, about 4-5 minutes. Add garlic and cook 1 more minute.
3. Push veggies to the side, add ground beef to the skillet. Cook until browned and fully done. Drain excess fat if needed.
4. Sprinkle Cajun seasoning over meat and vegetables. Stir in heavy cream and simmer for 5 minutes.
5. Add the cooked pasta and Parmesan cheese. Stir until fully coated. Use reserved pasta water to loosen the sauce if needed.
