Ingredients

3 pounds russet potatoes

1 cup heavy cream

1 cup milk

4 tablespoons butter

3 tablespoons all-purpose flour

2 cloves garlic, minced

1 medium white onion, diced

1 1/2 cups shredded cheddar cheese

1/2 cup grated parmesan cheese

1 1/2 teaspoons salt

1/2 teaspoon black pepper

2 tablespoons fresh chopped parsley (optional garnish)


Instructions

1. Peel and thinly slice the russet potatoes; place in cold water to prevent browning.

2. In a saucepan, melt butter over medium heat. Add diced onions and minced garlic; sauté until soft.

3. Stir in flour and cook for 1-2 minutes to make a roux. Gradually whisk in milk and cream.

4. Cook the sauce until it thickens. Stir in salt, pepper, 1/2 cup cheddar, and 1/4 cup parmesan.

5. Drain and pat dry the potatoes. Layer them in a greased baking dish and pour over the cream sauce. Repeat layers.

6. Top with remaining cheddar and parmesan. Cover with foil and bake at 375°F for 40 minutes.

7. Remove foil and bake an additional 20-25 minutes until golden and bubbling.

8. Let rest for 10-15 minutes. Garnish with parsley if using.

Notes

Use a mandoline slicer for evenly thin potatoes that cook through easily.

For extra flavor, add a pinch of nutmeg or a dash of cayenne to the cream sauce.
