Ingredients

2 cups shredded chicken

1 cup roasted green chiles

1 can (15 oz) white beans, drained and rinsed

1 cup corn (fresh, canned, or frozen)

3 cups chicken broth

4 oz cream cheese

1 small yellow onion, diced

3 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon dried oregano

1/2 teaspoon chili powder

1/4 cup chopped cilantro

1 tablespoon fresh lime juice

Salt and pepper to taste

Olive oil for sautéing


Instructions

1. Sauté diced onion and garlic in olive oil over medium heat until soft and fragrant.

2. Stir in shredded chicken, green chiles, white beans, corn, and chicken broth.

3. Add cumin, oregano, chili powder, salt, and pepper. Stir to combine.

4. Bring to a simmer, then reduce heat and add cream cheese. Stir until melted and creamy.

5. Simmer uncovered for 10–15 minutes, allowing flavors to develop.

6. Finish with lime juice and chopped cilantro.

Notes

For extra flavor, use fire-roasted green chiles or a blend of mild and hot chiles.

To thicken the chili, mash some of the white beans before adding or simmer longer uncovered.
