Ingredients

1 lb Italian sausage (mild or spicy)

1 tbsp olive oil

1 small onion, diced

3 garlic cloves, minced

3 cups chicken broth

1 cup heavy cream

1 can (14 oz) diced tomatoes (with juice)

1 cup grated Parmesan cheese

1 tsp Italian seasoning

1/2 tsp crushed red pepper flakes (optional)

Salt and black pepper to taste

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage and cook for 5-7 minutes until browned. Drain excess grease if needed.
  2. Add diced onion and cook for 3-4 minutes until softened. Stir in minced garlic and cook for 1 more minute.
  3. Pour in chicken broth and diced tomatoes. Add Italian seasoning and red pepper flakes (if using). Bring to a simmer and cook for 10-15 minutes.
  4. Reduce heat to low, then slowly stir in the heavy cream. Gradually add Parmesan cheese, stirring continuously until melted.
  5. Season with salt and pepper to taste. Garnish with fresh parsley before serving.
