Ingredients

12 oz rotini pasta

1 pound chicken breasts or thighs

1 tablespoon Cajun seasoning

1 tablespoon olive oil

2 tablespoons butter

3 cloves garlic minced

1 cup heavy cream

1 cup grated parmesan cheese

1⁄4 cup chopped parsley

1⁄2 teaspoon salt

1⁄4 teaspoon black pepper


Instructions

1. Bring a large pot of salted water to a boil. Cook the rotini until al dente, then drain and set aside. Save 1⁄2 cup of pasta water.

2. Season the chicken with Cajun seasoning, salt, and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken for 5–7 minutes per side until cooked through. Remove and let rest.

3. In the same skillet, add butter and minced garlic. Sauté for 1–2 minutes until fragrant.

4. Pour in heavy cream and stir in parmesan cheese and reserved pasta water. Simmer until thick and smooth. Season with salt and pepper.

5. Add chopped parsley, then toss in cooked rotini pasta until fully coated in sauce.

6. Slice the chicken and serve on top of the creamy pasta.

7. Garnish with extra parmesan and parsley if desired.

Notes

To make it spicier, add extra Cajun seasoning or a dash of cayenne pepper.

Swap parsley for basil or thyme for a flavor twist.
