Ingredients

6 boneless, skinless chicken thighs

1 tablespoon olive oil

Salt and pepper to taste

3 cloves garlic, minced

½ cup chicken broth

½ cup heavy cream

½ cup sliced pepperoncini (plus extra for garnish)

½ cup green olives (pitted)

1 teaspoon dried oregano

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper. Sear each thigh 4-5 minutes per side until golden. Remove and set aside.
  2. Build the Base: In the same skillet, lower heat to medium and add minced garlic. Cook 30 seconds. Stir in mustard, oregano, and chicken broth. Simmer 2 minutes.
  3. Make It Creamy: Add cream, pepperoncini, and olives. Stir and simmer 3-5 minutes until slightly thickened.
  4. Bring It Together: Return chicken to the skillet. Spoon sauce over top. Cover and cook on low for 8-10 minutes until fully cooked.
  5. Finish and Serve: Garnish with parsley and extra pepperoncini. Serve hot with rice, mashed potatoes, or crusty bread.
