Ingredients

1 cup heavy whipping cream

8 oz mascarpone cheese

1 cup pumpkin puree

1/2 cup powdered sugar

1 1/2 teaspoons pumpkin pie spice

1 teaspoon vanilla extract

1 1/2 cups brewed espresso or strong coffee

24 ladyfinger cookies

2 tablespoons unsweetened cocoa powder (for dusting)


Instructions

1. Whip the heavy cream until stiff peaks form; set aside.

2. In a bowl, beat mascarpone, pumpkin puree, powdered sugar, pumpkin pie spice, and vanilla extract until smooth.

3. Fold the whipped cream gently into the mascarpone pumpkin mixture until fully combined.

4. Dip each ladyfinger quickly into the coffee or espresso (about 1–2 seconds per side).

5. Layer dipped ladyfingers in a 9×9-inch dish.

6. Spread half the pumpkin cream mixture over the ladyfingers.

7. Repeat with another layer of dipped ladyfingers and the rest of the cream.

8. Cover and refrigerate for at least 4 hours, preferably overnight.

9. Dust the top with cocoa powder before serving.

Notes

Make sure the ladyfingers are dipped quickly; too long and they’ll become soggy.

Best made the night before so flavors have time to meld beautifully.
