Ingredients

2 pounds russet potatoes

1 head garlic, roasted

4 tablespoons butter

1/2 cup heavy cream

1 teaspoon salt

1/2 teaspoon black pepper

1 pound ground sausage

1 small onion, finely chopped

2 tablespoons all-purpose flour

2 cups beef broth

1 tablespoon fresh parsley, chopped (optional)


Instructions

1. Slice the top off the garlic head, drizzle with olive oil, wrap in foil, and roast at 400°F for 35–40 minutes until golden and soft.

2. Peel and chop potatoes, then boil in salted water until fork-tender (about 15–20 minutes). Drain and return to pot.

3. Add butter, roasted garlic, cream, salt, and pepper. Mash until smooth and creamy.

4. In a skillet, cook sausage over medium-high heat until browned. Remove sausage, leaving drippings.

5. Add onion to skillet and cook until soft. Stir in flour and cook for 1–2 minutes.

6. Slowly whisk in beef broth and cook until thickened.

7. Return sausage to skillet and stir into the gravy.

8. Serve gravy over mashed potatoes and top with chopped parsley.
