12 oz bowtie pasta (farfalle)

1 lb ground beef

1 tablespoon olive oil

1/2 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1/2 teaspoon black pepper

1/2 teaspoon salt (adjust to taste)

1/2 teaspoon red pepper flakes (optional)

1 cup milk

8 oz Velveeta cheese, cubed

1/2 cup shredded cheddar cheese (optional)

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  1. Cook Pasta: Bring a large pot of salted water to a boil. Cook the bowtie pasta until al dente, then drain and set aside. Reserve 1/2 cup pasta water.
  2. Brown Beef: In a skillet, heat olive oil over medium heat. Add chopped onion and sauté for 3–4 minutes. Add garlic and cook for 30 seconds more. Add ground beef and cook until browned, breaking it apart as it cooks. Drain excess grease.
  3. Season: Sprinkle beef with paprika, salt, pepper, and red pepper flakes. Stir well.
  4. Make Cheese Sauce: Lower the heat to medium-low. Pour in milk and scrape the pan. Add Velveeta cubes and stir until melted. Stir in cheddar cheese if using.
  5. Combine: Add cooked pasta to the cheese-beef mixture. Toss until fully coated. Add reserved pasta water if needed to adjust consistency.
