Ingredients
1 lb ground beef
12 oz penne pasta
2 tbsp unsalted butter
1 medium onion, diced
8 oz mushrooms, sliced
3 cloves garlic, minced
2 cups low-sodium beef broth
12 oz Velveeta, cut in cubes
1 cup sour cream
1 tsp kosher salt (to taste)
1/2 tsp black pepper (to taste)
2 tbsp fresh parsley, chopped (optional)
Instructions
1. Bring a large pot of salted water to a boil. Cook penne until al dente; drain.
2. In a large skillet, melt butter over medium heat; cook onion 3–4 minutes.
3. Add ground beef; cook until browned. Drain excess fat; season with salt and pepper.
4. Stir in mushrooms and garlic; cook 3–4 minutes until tender.
5. Pour in beef broth; scrape up browned bits and simmer 3–5 minutes.
6. Lower heat; add Velveeta cubes and stir until fully melted and smooth.
7. Remove from heat briefly; whisk in sour cream until silky. Adjust seasoning.
8. Add pasta; toss to coat. Garnish with parsley and serve hot.
Notes
