Ingredients

1 large head cauliflower, cut into bite-sized florets

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon cornstarch (optional)

1 tablespoon chopped fresh parsley for garnish

1/4 cup mayonnaise

1/4 cup Greek yogurt or sour cream

1 clove garlic, minced

1 tablespoon lemon juice

1/4 teaspoon salt

1/8 teaspoon black pepper


Instructions

1. Preheat oven to 425°F and line a baking sheet with parchment paper.

2. Cut cauliflower into bite-sized florets and dry them well.

3. In a bowl, toss florets with olive oil, garlic powder, onion powder, paprika, salt, pepper, and cornstarch if using.

4. Spread cauliflower on baking sheet and roast for 25–30 minutes, flipping halfway through.

5. While roasting, mix together mayo, Greek yogurt or sour cream, minced garlic, lemon juice, salt, and pepper for the dipping sauce.

6. Once cauliflower is golden and crisp, remove from oven and garnish with fresh parsley.

7. Serve immediately with garlic sauce on the side.

Notes

For extra crispiness, broil the cauliflower bites for 2–3 minutes after roasting.
