Ingredients

1 small onion, finely chopped
2 cloves garlic, minced
1 can black beans, drained and rinsed (15 oz)
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded cheddar cheese
8 corn tortillas
1/2 cup sour cream (for serving)
1/4 cup fresh cilantro, chopped (for serving)
1 lime, cut into wedges (optional)
Instructions
1. Heat olive oil in a skillet over medium heat. Add chopped onion and garlic, cooking until softened.
2. Stir in black beans, chili powder, cumin, salt, and pepper. Lightly mash the beans with a spatula.
3. Mix in shredded cheddar until melted and combined.
4. Spoon the mixture onto one half of each corn tortilla and fold into a taco shape.
5. Wipe the skillet clean, add a thin layer of oil, and heat again.
