Ingredients
1 pound ground beef
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
6 large flour tortillas
1/2 cup diced tomatoes
1/4 cup diced onions
1/4 cup chopped green chilies or jalapeños
2 tablespoons taco seasoning
2 tablespoons olive oil (or cooking spray)
Instructions
1. In a skillet over medium heat, cook the ground beef until browned. Drain the grease.
2. Add taco seasoning and 1/4 cup water. Simmer for 2–3 minutes until thickened.
3. Stir in tomatoes, onions, and chilies. Remove from heat and let it cool slightly.
4. Stir in both cheeses and mix to combine evenly.
5. Lay a tortilla flat, spoon filling into center, fold sides, and roll tightly.
6. Heat oil in skillet and place chimichangas seam side down. Fry until golden and crispy on all sides.
7. Alternatively, air fry at 375°F for 8–10 minutes or bake at 400°F for 15–20 minutes.

Notes
Be sure not to overfill the tortillas to prevent tearing during rolling or frying.
Let the beef mixture cool slightly before adding the cheese to prevent melting too early.
