Ingredients
4 boneless, skinless chicken breasts
2 cups buttermilk
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon paprika
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon salt
½ teaspoon black pepper
½ teaspoon cayenne pepper (optional)
2 large eggs
2 tablespoons milk
Vegetable oil for frying
Fresh parsley for garnish (optional)
Instructions
- Prepare the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet or rolling pin.
- Marinate in Buttermilk: Pour the buttermilk over the chicken in a bowl, cover, and refrigerate for at least 1 hour (or overnight for extra tenderness).
- Prepare the Breading Station: In one bowl, mix flour, baking powder, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. In another bowl, whisk the eggs and milk.
- Dredge the Chicken: Remove chicken from buttermilk, dredge in flour mixture, dip into egg mixture, then coat again in flour. Press flour onto the chicken to ensure a crispy crust.
- Heat the Oil: In a skillet or deep fryer, heat about 1 inch of oil to 350°F (175°C).
- Fry the Chicken: Fry each piece for 4-5 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).
- Drain and Serve: Place fried chicken on a wire rack or paper towel-lined plate. Garnish with parsley and serve hot with your favorite sides.
