Ingredients

2 medium zucchinis, sliced into 1/4-inch thick rounds

1/2 cup all-purpose flour

2 large eggs

1 tablespoon milk or water

1 cup Italian-seasoned breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon garlic powder

Salt and freshly ground black pepper, to taste

Oil for frying (vegetable, canola, or olive oil)


Instructions

  1. Rinse and dry zucchinis. Slice into 1/4-inch rounds.
  2. Lightly salt the slices and set aside for 10 minutes to draw out moisture.
  3. Set up three bowls: one with flour, one with whisked eggs and milk, and one with breadcrumbs, Parmesan, garlic powder, salt, and pepper.
  4. Dredge each zucchini slice in flour, then dip in egg wash, then coat with breadcrumb mix.
  5. Heat oil in a skillet over medium heat. Oil should sizzle when a breadcrumb is dropped in.
  6. Fry zucchini slices for 2–3 minutes per side until golden brown and crisp.
  7. Transfer to paper towels to drain. Serve hot with your favorite dip.
