Ingredients
2 medium zucchinis, sliced into 1/4-inch thick rounds
1/2 cup all-purpose flour
2 large eggs
1 tablespoon milk or water
1 cup Italian-seasoned breadcrumbs
1/2 cup grated Parmesan cheese
1 teaspoon garlic powder
Salt and freshly ground black pepper, to taste
Oil for frying (vegetable, canola, or olive oil)
Instructions
- Rinse and dry zucchinis. Slice into 1/4-inch rounds.
- Lightly salt the slices and set aside for 10 minutes to draw out moisture.
- Set up three bowls: one with flour, one with whisked eggs and milk, and one with breadcrumbs, Parmesan, garlic powder, salt, and pepper.
- Dredge each zucchini slice in flour, then dip in egg wash, then coat with breadcrumb mix.
- Heat oil in a skillet over medium heat. Oil should sizzle when a breadcrumb is dropped in.
- Fry zucchini slices for 2–3 minutes per side until golden brown and crisp.
