Ingredients

1.5 pounds baby potatoes

3 cloves garlic, minced

3 tablespoons unsalted butter

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley


Instructions

1. Place baby potatoes in a large pot of salted water. Boil for 20 minutes or until fork-tender. Drain and let cool slightly.

3. Place potatoes on the sheet and gently smash each to about 1/2 inch thick using a glass or masher.
