Ingredients

1.5 lbs Yukon Gold potatoes

2 tablespoons olive oil

2 tablespoons unsalted butter

3 cloves garlic, minced

1/3 cup grated Parmesan cheese

1 teaspoon dried thyme

1/2 teaspoon dried rosemary

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Wash and scrub the potatoes well; slice them into 1/8-inch rounds.

2. In a large oven-safe skillet, heat olive oil and butter over medium heat.

3. Add minced garlic, thyme, and rosemary to the skillet; sauté until fragrant.

4. Remove from heat and layer potato slices in overlapping circles in the skillet.

5. Sprinkle Parmesan, salt, and pepper between layers as you go.

6. Return skillet to medium heat and cook uncovered for 10–15 minutes to start crisping.

7. Transfer skillet to a preheated 400°F oven and bake for 25–30 minutes.

8. Let rest for 5 minutes before serving.
