Ingredients
3 cups frozen shredded hashbrowns (thawed and squeezed dry)
1 pound breakfast sausage (cooked and crumbled)
1.5 cups shredded cheddar cheese
2 large eggs (beaten)
1 teaspoon onion powder
0.5 teaspoon garlic powder
0.5 teaspoon salt
0.25 teaspoon black pepper
non-stick spray or oil (for greasing)
Instructions
1. In a skillet, cook sausage over medium heat until browned and fully cooked. Drain grease and let cool.
2. Press thawed hashbrowns with paper towels to remove excess moisture.
3. In a bowl, mix hashbrowns, sausage, cheese, eggs, onion powder, garlic powder, salt, and pepper.
4. Preheat oven to 400°F and grease a mini muffin tin with oil or spray.
5. Scoop mixture into muffin cups, pressing lightly to pack.
