Ingredients
8 egg roll wrappers
6 fresh jalapeños, seeded and finely chopped
1 cup cream cheese, softened
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
Salt and pepper to taste
Optional: 4 strips of cooked bacon, crumbled
1 egg (for sealing the wrappers)
Oil for frying (vegetable or canola)
Optional garnish: chopped parsley or cilantro
Dipping sauce of your choice (ranch, sour cream, chipotle mayo)
Instructions
- In a medium bowl, mix cream cheese, cheddar, mozzarella, garlic powder, onion powder, salt, and pepper until smooth. Fold in jalapeños and bacon (if using).
- Lay an egg roll wrapper flat with a corner facing you. Add 2 tablespoons of filling just below center.
- Fold bottom corner over filling, fold in sides, and roll tightly. Seal with beaten egg. Repeat.
- Heat 2 inches of oil in a skillet to 350°F (175°C).
- Fry 3–4 egg rolls at a time for 3–4 minutes until golden. Drain on paper towels.
- Serve hot with dipping sauce and garnish if desired.
