Ingredients

2 pounds Yukon Gold or Russet potatoes

2 cups heavy cream

3 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh thyme leaves

1 cup grated Parmesan cheese

1 1/2 cups shredded Gruyere cheese

2 tablespoons butter, for greasing


Instructions

1. Preheat oven to 375°F (190°C). Grease a baking dish with butter.

2. Slice potatoes thinly (about 1/8-inch thick) using a mandoline or sharp knife.

3. In a saucepan, warm the heavy cream with garlic, salt, pepper, and thyme. Do not boil. Remove thyme sprigs before using.

4. Layer potatoes in the dish. Pour some cream over each layer and sprinkle with Parmesan and Gruyere. Repeat layers.

5. Top with remaining cheese. Cover with foil and bake for 40 minutes.

6. Remove foil and bake another 20 minutes until golden and bubbly.

7. Let sit for 10 minutes before serving to set.

Notes

Use a mandoline for perfectly even slices to ensure even cooking.
