Ingredients

14 ounces artichoke hearts, whole or halved (canned or jarred, in water or brine)

2 eggs, beaten

3/4 cup grated Parmesan cheese

1 cup Panko breadcrumbs

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried parsley or Italian seasoning

1/4 teaspoon salt

1/4 teaspoon black pepper

olive oil spray or drizzle


Instructions

1. Drain and pat the artichoke hearts completely dry with paper towels.

2. Set up three shallow bowls: one with beaten eggs, one with Parmesan cheese, and one with breadcrumbs, garlic powder, onion powder, dried herbs, salt, and pepper mixed together.

3. Dip each artichoke heart into the egg, then coat in Parmesan, then press into breadcrumb mixture.

4. Place coated hearts on a lined baking sheet or air fryer basket.

5. For oven: Bake at 425°F for 18–20 minutes, flipping halfway, until golden and crispy.

6. For air fryer: Cook at 390°F for 10–12 minutes, shaking halfway.

7. Serve hot with garlic aioli, ranch, or marinara sauce.

Notes

Patting the artichokes dry is essential for the crispiest result—don’t skip it.

If using an air fryer, make sure the hearts don’t overlap to ensure even cooking.
