Ingredients

1 pound boneless skinless chicken breasts or thighs

2 large eggs

1 cup all-purpose flour

1 cup panko breadcrumbs

1 cup grated parmesan cheese

1 teaspoon garlic powder

1 teaspoon paprika

1 tablespoon Cajun seasoning

2 tablespoons butter

1 1/2 cups heavy cream

1 cup shredded smoked gouda or smoked cheddar

1/4 cup grated parmesan (for sauce)

8 ounces fettuccine or rigatoni pasta

Salt to taste

Fresh parsley for garnish

Vegetable oil for frying


Instructions

1. Cut chicken into bite-sized chunks.

2. Whisk eggs in a bowl. In a separate bowl, combine flour, garlic powder, and paprika. In a third bowl, mix panko and parmesan.

3. Coat each chicken piece in flour, then egg, then panko-parmesan mixture.

4. Heat oil in skillet. Fry chicken until golden and cooked through, 3–4 minutes per side. Drain on paper towels.

5. Boil pasta in salted water according to package directions. Drain and set aside.

6. Melt butter in saucepan, stir in Cajun seasoning and garlic powder. Add heavy cream and bring to a simmer.

7. Stir in shredded smoked gouda and parmesan. Cook until sauce is smooth and creamy.

8. Toss pasta with Alfredo sauce until fully coated.

9. Plate pasta with crispy chicken. Garnish with parsley and extra parmesan.
