Ingredients

450g Yukon gold potatoes

60g unsalted butter, melted

2 cloves garlic, minced

1 teaspoon fresh thyme leaves or 1/2 tsp dried thyme

60g freshly grated Parmesan cheese

1/2 teaspoon sea salt

1/4 teaspoon black pepper

1 tablespoon chopped fresh parsley (for garnish)


Instructions

1. Preheat the oven to 375°F (190°C) and grease a 12-cup muffin tin.

2. Thinly slice the potatoes into 1/8-inch rounds using a mandoline or sharp knife.

3. In a large bowl, combine melted butter, garlic, thyme, salt, pepper, and half of the Parmesan cheese.

4. Toss the potato slices in the mixture until well coated.

5. Stack the potato slices into each muffin cup, layering evenly to just above the rim.

6. Sprinkle the remaining Parmesan cheese over the top of each stack.

7. Bake for 45-50 minutes until the tops are crispy and the centers are fork-tender.

8. Let rest for 5 minutes, then carefully remove with a spoon.

9. Garnish with fresh parsley and serve warm.

Notes

Use a mandoline for ultra-thin and even slices.

Reheat leftovers in an air fryer or oven for best crispiness.
