Ingredients

2 large sweet potatoes, peeled and diced

2 tablespoons olive oil

1 teaspoon salt

½ teaspoon black pepper

3 tablespoons unsalted butter

2 cloves garlic, minced

1 tablespoon fresh sage, finely chopped

1 teaspoon fresh thyme, chopped

⅓ cup grated parmesan cheese

¼ cup breadcrumbs (optional)


Instructions

1. Peel and dice the sweet potatoes into 1-inch cubes.

2. Toss the sweet potatoes with olive oil, salt, and pepper.

3. Spread on a baking sheet and roast at 425°F (220°C) for 25–30 minutes, flipping halfway.

4. While roasting, melt butter in a saucepan over medium heat.

5. Add garlic, sage, and thyme. Cook for 1–2 minutes until fragrant.

6. Transfer roasted sweet potatoes to a bowl and pour herbed butter over them. Toss gently.

7. Add parmesan and breadcrumbs (if using). Toss to coat evenly.

8. Serve hot, garnished with extra cheese and herbs if desired.

Notes

Use parchment paper to prevent sticking and help crisp the edges evenly.

For extra crunch, broil the bites for the last 2 minutes of roasting.
