Ingredients

2 boneless skinless chicken breasts

2 tablespoons taco seasoning

1 tablespoon olive oil

6 cups chopped romaine lettuce

1 cup cherry tomatoes, halved

1 cup corn kernels

1 cup black beans, drained and rinsed

1 cup shredded cheddar cheese

1 avocado, diced

1/4 cup thinly sliced red onion

1 cup tortilla strips

1/2 cup sour cream

1/3 cup salsa

1 tablespoon lime juice

2 tablespoons chopped cilantro


Instructions

1. Rub the chicken breasts with olive oil and taco seasoning until fully coated.

2. Cook the chicken in a skillet over medium heat for 5 to 6 minutes per side, or until cooked through.

3. Let the chicken rest for 5 minutes, then slice or shred it.

4. In a small bowl, stir together the sour cream, salsa, and lime juice to make the dressing.

5. In a large bowl, add the romaine, cherry tomatoes, corn, black beans, cheddar cheese, avocado, and red onion.

6. Top the salad with the cooked chicken and drizzle with the dressing.

7. Finish with chopped cilantro and tortilla strips right before serving for the best crunch.

Notes

Do not add the tortilla strips or dressing too early, or the salad will lose its signature crunch and turn soggy.
