Ingredients
6 large eggs
1 cup milk
1 1/2 cups zucchini, thinly sliced or shredded
1 cup cherry tomatoes, halved
1 cup shredded cheddar or mozzarella cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped fresh parsley or basil
Instructions
1. Slice the zucchini into thin rounds and cut cherry tomatoes in halves. Pat the zucchini dry with paper towels.
2. Preheat the oven to 375°F (190°C). Grease a 9-inch pie or baking dish with butter or spray.
3. In a large bowl, whisk together the eggs until smooth. Add milk, salt, pepper, and herbs.
4. Stir in the zucchini, cherry tomatoes, and cheese.
5. Pour the mixture into the prepared dish and smooth the top.
6. Bake for 35–40 minutes or until golden and set in the center.
