Ingredients
8 slices white sandwich bread
4 oz cream cheese, softened
1 tbsp fresh dill, finely chopped
1 English cucumber, thinly sliced
1/8 tsp salt
Pinch black pepper (optional)
Instructions
1. Wash and thinly slice the cucumber. Lay slices on paper towels, sprinkle lightly with salt, and let sit 10 minutes. Pat dry.
2. In a bowl, combine cream cheese, dill, and black pepper. Mix until smooth.
3. Spread the herbed cream cheese evenly over all bread slices.
4. Layer cucumber slices on half the bread slices. Top with the remaining slices.
5. Trim off the crusts and slice sandwiches into halves or quarters.
6. Serve immediately or refrigerate up to 2 hours.
Notes
Make sure cucumbers are patted dry to avoid soggy sandwiches.
For extra flavor, use garlic herb cream cheese instead of plain.
