Ingredients
2 sheets puff pastry, thawed
8 ounces cream cheese, softened
1/3 cup granulated sugar
1 teaspoon vanilla extract
1 egg yolk
2 cups fresh blueberries
2 tablespoons granulated sugar
1 tablespoon lemon juice
1 tablespoon cornstarch
1/2 cup powdered sugar
1 tablespoon milk
Instructions
1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
2. Unfold the puff pastry sheets and cut them into 6 equal rectangles total. Place them on the prepared baking sheet.
3. Lightly score a border around each rectangle, leaving about 1/2 inch from the edge.
4. In a mixing bowl, beat the cream cheese, 1/3 cup granulated sugar, vanilla extract, and egg yolk until smooth.
5. In a small saucepan, combine the blueberries, 2 tablespoons granulated sugar, lemon juice, and cornstarch. Cook over medium heat for 4 to 5 minutes, stirring gently, until thickened. Let cool slightly.
6. Spoon the cream cheese mixture into the center of each pastry rectangle, staying inside the border.
7. Top each one with a spoonful of the blueberry mixture.
8. Bake for 15 to 18 minutes, or until the pastry is puffed and golden brown.
9. Whisk together the powdered sugar and milk until smooth.
10. Drizzle the glaze over the slightly cooled danishes and serve.
Notes
