Ingredients
2 cups chocolate cookie crumbs
6 tablespoons melted butter
16 ounces cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 1/4 cups heavy cream
1 1/4 cups semi-sweet chocolate chips, melted
1 cup sweetened condensed milk
1 cup shredded coconut
1/2 cup chopped pecans
1/2 cup chocolate chips (for ganache)
1/4 cup heavy cream (for ganache)
Instructions
1. Combine chocolate cookie crumbs with melted butter. Press into the bottom of a springform pan. Chill for 30 minutes.
2. Melt 1 1/4 cups chocolate chips and let cool. In a bowl, beat cream cheese, powdered sugar, and vanilla until fluffy.
3. Fold in melted chocolate. Whip heavy cream separately to soft peaks, then fold into the chocolate mixture.
4. Spread filling evenly over the crust and refrigerate for at least 4 hours or overnight.
5. Combine sweetened condensed milk, shredded coconut, and pecans in a saucepan. Cook over medium heat, stirring constantly until thick. Let cool.
6. Spread the coconut-pecan topping over the cheesecake.
7. Melt chocolate chips with cream for ganache and drizzle on top. Chill an additional 30 minutes before serving.
