1.5 pounds beef chuck roast, cut into cubes

4 cups beef broth

2 bay leaves
1 teaspoon dried thyme
3 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1.5 cups self-rising flour (for dumplings)
3 tablespoons unsalted butter (for dumplings)
2/3 cup milk (for dumplings)
Instructions
1. Season beef with salt and pepper, then toss with flour to coat evenly.
2. In a large Dutch oven, heat oil over medium-high heat and brown beef in batches. Set aside.
3. In the same pot, add onions, carrots, and celery. Sauté until softened, about 5 minutes.
