2 pounds sirloin steak, cut into 1-inch cubes
1 tablespoon olive oil
4 tablespoons unsalted butter, melted
4 cloves garlic, minced
1/3 cup low-sodium beef broth
2 tablespoons Worcestershire sauce
1 tablespoon soy sauce
1 tablespoon brown sugar, packed
1 teaspoon smoked paprika
1 teaspoon dried Italian seasoning
1/2 teaspoon onion powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
1 tablespoon cornstarch, optional (for thickening)
1 tablespoon water, optional (for thickening)
1 tablespoon chopped fresh parsley, for garnish
Instructions
1. Pat the steak dry with paper towels and cut it into 1-inch cubes if not already cubed. Season all over with kosher salt and black pepper.
2. Heat the olive oil in a large skillet over medium-high heat. Sear the steak cubes in batches, turning until browned on all sides, about 1–2 minutes per side. Transfer the browned steak to the crockpot as you go.
3. In a medium bowl, whisk together the melted butter, minced garlic, beef broth, Worcestershire sauce, soy sauce, brown sugar, smoked paprika, Italian seasoning, and onion powder until well combined.
4. Pour the garlic butter sauce over the steak cubes in the crockpot and stir gently so every piece is coated.
5. Cover and cook on LOW for 3–4 hours or on HIGH for 1 1/2–2 hours, until the steak bites are very tender and easily pierced with a fork. Stir once halfway through cooking.
6. If you’d like a thicker sauce, whisk the cornstarch and water together in a small bowl to make a slurry. Stir it into the crockpot during the last 15–20 minutes of cooking, turning the heat to HIGH if needed, until the sauce has thickened.
7. Taste the sauce and adjust seasoning with additional salt or pepper if desired. Sprinkle the steak bites with chopped fresh parsley and serve hot with your favorite sides.
Notes
For the most tender crockpot steak bites, resist the urge to cook them too long on high; overcooking can make even well-marbled steak dry and chewy instead of buttery and soft.
