Ingredients

1 pound ground beef

3 cups cooked white rice

1 tablespoon olive oil

1 small onion, diced

1 red bell pepper, diced

3 cloves garlic, minced

1 can diced tomatoes

1/2 cup beef broth

1 teaspoon paprika

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

2 tablespoons fresh parsley, chopped


Instructions

1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, then cook for 4 to 5 minutes until softened. Stir in the garlic and cook for 30 seconds.

2. Add the ground beef and cook until browned, breaking it up with a spoon as it cooks. Drain excess grease if needed.

3. Stir in the diced tomatoes, beef broth, paprika, Italian seasoning, salt, and black pepper. Let the mixture simmer for 3 to 4 minutes.

4. Add the cooked rice and stir well until everything is evenly combined and heated through.

5. Sprinkle the cheddar and mozzarella cheese over the top. Cover the skillet and let it cook for 2 to 3 minutes, until the cheese is melted.

6. Finish with fresh parsley and serve warm.

Notes

Do not add too much extra liquid after stirring in the rice, or the skillet can turn mushy instead of staying fluffy and hearty.
