Ingredients
1 pound ground beef
1 cup orzo pasta
1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 tablespoon tomato paste
1 cup cherry tomatoes or 1 can diced tomatoes
2 cups beef broth
1 teaspoon salt
½ teaspoon black pepper
1 tablespoon fresh rosemary or parsley (optional)
Instructions
1. Heat a large skillet over medium-high heat. Add ground beef and cook until browned. Drain excess fat if needed.
2. Push beef to one side of the skillet. Add olive oil, onion, and garlic. Sauté for 2-3 minutes.
3. Stir in tomato paste and tomatoes. Cook for 1-2 minutes to blend flavors.
4. Add orzo and beef broth. Stir well. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes.
5. Once orzo is tender and most of the liquid is absorbed, season with salt and pepper.
6. Garnish with fresh herbs and serve hot.
Notes
For a lighter version, use ground turkey or chicken instead of beef.
Leftovers are delicious the next day—just add a splash of broth before reheating.
