Ingredients

1 cup lobster meat (cooked and chopped)

2 tablespoons unsalted butter

2 tablespoons all-purpose flour

1 cup whole milk

1/2 cup heavy cream

1/4 cup white wine

1 small shallot (minced)

2 cloves garlic (minced)

1/2 cup diced carrots

1/2 cup peas

1/2 teaspoon fresh thyme

1 tablespoon fresh parsley (chopped)

1 sheet puff pastry (thawed if frozen)

1 egg (beaten, for egg wash)

Salt and pepper to taste


Instructions

1. Bring a pot of salted water to a boil and cook lobster tails and claws for 5-6 minutes. Cool and chop into chunks.

2. In a skillet, melt butter over medium heat. Sauté shallots and garlic until fragrant. Add carrots and cook 3-4 minutes.

3. Stir in flour and cook 1 minute. Gradually whisk in white wine, milk, and cream. Simmer 5 minutes until thickened.

4. Add thyme, salt, pepper, peas, and lobster meat. Cook 2 more minutes, remove from heat.

5. Spoon filling into a baking dish. Cover with puff pastry, trim edges, and cut slits for steam.

6. Brush with egg wash.

7. Bake at 400°F for 25-30 minutes until golden and puffed.

8. Let cool 5 minutes before serving. Garnish with parsley.

Notes

For best results, use an all-butter puff pastry—it bakes up richer and flakier.

Add a splash of cognac or paprika for a creative twist to the sauce.
