Ingredients

2 pounds boneless skinless chicken thighs

1 cup pineapple juice

1/2 cup brown sugar

1/3 cup soy sauce

3 cloves garlic, minced

1 tablespoon cornstarch

2 tablespoons water (for slurry)

2 tablespoons chopped green onions (optional, for garnish)

1 teaspoon sesame seeds (optional, for garnish)


Instructions

1. Place chicken thighs in the bottom of a slow cooker.

2. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and garlic. Pour over chicken.

3. Cover and cook on low for 6 hours or high for 3–4 hours, until chicken is very tender.

4. Remove chicken and set aside. Pour sauce into a saucepan and bring to a simmer.

5. Stir in cornstarch mixed with water to form a slurry. Simmer until sauce thickens.

6. Shred or cube the chicken, return to sauce, and stir to coat evenly.

7. Serve over rice or noodles and garnish with green onions and sesame seeds if desired.

Notes

For a spicier kick, add a teaspoon of chili flakes or a splash of sriracha to the sauce.

Using fresh pineapple juice gives a brighter flavor but canned works great too.
