Ingredients

2 lbs beef chuck, cut into 1-inch cubes

1 lb ground beef (optional)

2 tbsp vegetable oil

1 large yellow onion, diced

4 cloves garlic, minced

1/4 cup chili powder

1 tbsp ground cumin

1 tbsp smoked paprika

1 tsp dried oregano

1/2 tsp cayenne pepper (adjust to taste)

1 tsp salt

1/2 tsp black pepper

2 tbsp tomato paste

1 (15 oz) can crushed tomatoes

2 cups beef broth

1 tbsp apple cider vinegar

1 tsp brown sugar (optional)

Fresh chopped cilantro and diced onion, for garnish


Instructions

  1. In a large Dutch oven, heat oil over medium-high heat. Sear beef cubes in batches until browned. Set aside.
  2. Lower heat and sauté diced onions until translucent. Add garlic and cook for 1 more minute.
  3. Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and pepper. Let spices bloom for 1–2 minutes.
  4. Add tomato paste and crushed tomatoes, stirring well.
  5. Return beef to the pot. Pour in broth. Bring to a simmer.
  6. Simmer uncovered for 1.5 to 2 hours, stirring occasionally.
  7. Stir in apple cider vinegar and brown sugar. Simmer for another 10 minutes.
  8. Serve with garnish of cilantro and onion.
