Ingredients
2 lbs beef chuck, cut into 1-inch cubes
1 lb ground beef (optional)
2 tbsp vegetable oil
1 large yellow onion, diced
4 cloves garlic, minced
1/4 cup chili powder
1 tbsp ground cumin
1 tbsp smoked paprika
1 tsp dried oregano
1/2 tsp cayenne pepper (adjust to taste)
1 tsp salt
1/2 tsp black pepper
2 tbsp tomato paste
1 (15 oz) can crushed tomatoes
2 cups beef broth
1 tbsp apple cider vinegar
1 tsp brown sugar (optional)
Fresh chopped cilantro and diced onion, for garnish
Instructions
- In a large Dutch oven, heat oil over medium-high heat. Sear beef cubes in batches until browned. Set aside.
- Lower heat and sauté diced onions until translucent. Add garlic and cook for 1 more minute.
- Stir in chili powder, cumin, paprika, oregano, cayenne, salt, and pepper. Let spices bloom for 1–2 minutes.
- Add tomato paste and crushed tomatoes, stirring well.
- Return beef to the pot. Pour in broth. Bring to a simmer.
- Simmer uncovered for 1.5 to 2 hours, stirring occasionally.
- Stir in apple cider vinegar and brown sugar. Simmer for another 10 minutes.
- Serve with garnish of cilantro and onion.
