Ingredients

12 large eggs

1 medium avocado

3 tablespoons mayonnaise

1 teaspoon Dijon mustard

1 teaspoon lemon juice

1/4 teaspoon salt

1/8 teaspoon black pepper

1/8 teaspoon smoked paprika

6 cherry tomatoes or 1/4 red bell pepper (for garnish)


Instructions

1. Place eggs in a saucepan, cover with cold water, and bring to a boil. Cover, remove from heat, and let sit for 12 minutes. Cool in ice water, then peel.

2. Halve the eggs lengthwise and carefully remove yolks into a bowl.

3. Mash yolks with avocado, mayo, Dijon, lemon juice, salt, and pepper until smooth.

4. Transfer filling to a piping bag fitted with a star tip.

5. Pipe tree shapes onto each egg white half, swirling upward.

6. Cut cherry tomatoes or bell pepper into star shapes and place on top of each tree.

7. Sprinkle with smoked paprika.

8. Chill for 30 minutes before serving.

Notes

For best piping results, refrigerate the filling for 10 minutes before adding to the piping bag.

Add a pinch of cayenne pepper if you prefer a bit of heat.
