Ingredients
1.5 pounds chicken breasts
1 cup dill pickle juice
1 cup panko breadcrumbs
0.75 cup grated Parmesan cheese
0.5 teaspoon garlic powder
0.5 teaspoon onion powder
2 eggs
0.5 cup all-purpose flour
0.25 cup chopped dill pickles
0.5 cup ranch or dill sauce
Instructions
1. Place chicken breasts in a resealable bag and cover with dill pickle juice. Marinate in the fridge for 1 to 4 hours.
2. Prepare three shallow bowls: one with flour and seasonings, one with beaten eggs, and one with panko and Parmesan.
3. Remove chicken from the marinade and pat dry. Dredge in flour, dip in eggs, and coat with panko-Parmesan mix.
4. Place on a wire rack over a baking sheet. Bake at 425°F for 20–25 minutes, broil the last 2–3 minutes for extra crisp.
