Ingredients

1 lb ground beef

1 cup long-grain white rice, uncooked

1 small onion, finely chopped

1 bell pepper (any color), diced

2 cloves garlic, minced

1 can (10 oz) diced tomatoes with green chilies, undrained

2 1/4 cups beef broth

1 tbsp Cajun seasoning (adjust to taste)

1/2 tsp paprika

Salt and pepper, to taste

2 tbsp olive oil

Fresh parsley, chopped (for garnish)


Instructions

  1. Heat olive oil in a large skillet over medium heat. Add onions and bell pepper; sauté 3–4 minutes. Add garlic and cook 30 seconds.
  2. Add ground beef, breaking it apart; cook until browned. Drain excess fat.
  3. Season with Cajun seasoning, paprika, salt, and pepper. Stir to combine.
  4. Stir in uncooked rice, diced tomatoes with juices, and beef broth. Bring to a boil.
  5. Cover and reduce heat to low. Simmer for 18–20 minutes without lifting the lid.
  6. Remove from heat, fluff with a fork, and garnish with parsley.
