Ingredients

1 lb boneless, skinless chicken breasts, cut into chunks

1 cup uncooked long-grain white rice

2 cups chicken broth

2 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon paprika

Salt and pepper to taste

Juice of ½ lemon

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Tzatziki Sauce:

1 cup plain Greek yogurt

1 small cucumber, grated and squeezed dry

2 tablespoons fresh dill, chopped

1 garlic clove, minced

1 tablespoon lemon juice

Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Spread the uncooked rice evenly in the dish.
  3. In a bowl, whisk together chicken broth, olive oil, garlic powder, onion powder, oregano, paprika, salt, pepper, and lemon juice.
  4. Pour the mixture over the rice.
  5. Add chicken chunks evenly throughout, slightly pressing them into the liquid.
  6. Cover tightly with foil and bake for 40-45 minutes.
  7. Uncover and bake an additional 10-15 minutes, until chicken is cooked and rice is tender.
