Ingredients

1 medium to large sweet potato

1 teaspoon olive oil

1/4 teaspoon sea salt

1 tablespoon butter (optional)

1 teaspoon chopped fresh herbs or flaky salt (optional)

Instructions

1. Preheat oven to 400°F (200°C). Scrub the sweet potatoes clean and pat dry.

2. Pierce each sweet potato several times with a fork.

3. Rub with olive oil and sprinkle with sea salt.

4. Place directly on the oven rack or a foil-lined baking sheet.

5. Bake for 45–60 minutes, or until a fork easily pierces the center.

6. Let cool slightly, slice open, fluff with a fork, and add butter or toppings.

Notes

For crispier skin, bake directly on the oven rack.

Add a sweet twist by topping with cinnamon and maple syrup.
