Ingredients

1 ½ lbs beef stew meat or sirloin, cut into bite-sized cubes

Salt and pepper, to taste

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 ½ cups beef broth

1 cup sour cream

2 tablespoons all-purpose flour

8 oz mushrooms, sliced (optional but recommended)

8 oz wide egg noodles

Fresh parsley, chopped (for garnish)


Instructions

  1. Season beef cubes with salt and pepper.
  2. In a large skillet, heat 1 tbsp of olive oil over medium-high heat. Sear beef in batches until browned. Set aside.
  3. Add remaining oil to the skillet, sauté chopped onion until soft, then stir in garlic.
  4. Add mushrooms (if using) and cook until golden, about 5 minutes.
  5. Stir in Worcestershire sauce and Dijon mustard. Sprinkle in flour and stir for 1 minute.
  6. Gradually add beef broth, stirring to blend. Bring to a simmer.
  7. Return beef to the skillet and let simmer for 10–15 minutes, until tender.
  8. Remove from heat, stir in sour cream until smooth.
  9. Cook egg noodles as directed on package. Drain and toss with butter, if desired.
  10. Serve beef stroganoff over noodles and garnish with chopped parsley.
