Ingredients

2 chicken breasts

5 ounces Boursin cheese (Garlic & Fine Herbs)

1 cup heavy cream

1 cup sliced mushrooms

1/2 cup chicken broth

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon butter

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon chopped parsley (optional)


Instructions

1. Season chicken breasts with salt and pepper.

2. Heat olive oil and butter in a skillet over medium heat. Sear chicken for 5–6 minutes per side, then set aside.

3. Add mushrooms to the same pan and sauté until browned, about 5–6 minutes.

4. Stir in garlic and cook for 1 minute.

5. Pour in chicken broth, scraping up browned bits. Simmer.

6. Add Boursin cheese and heavy cream. Stir until smooth and slightly thickened.

7. Return chicken to the skillet and spoon sauce over. Simmer for 2–3 minutes.

8. Garnish with parsley and serve hot.

Notes

Make sure the chicken is cooked to 165°F internally for safety and best texture.

If the sauce thickens too much, add a splash of broth or cream when reheating.
