Ingredients

2 cups cooked white rice

2 cups marinara sauce or crushed tomatoes

1 cup diced bell peppers

1/2 cup diced onion

1 teaspoon garlic powder

1 teaspoon Italian seasoning

20 pre-cooked meatballs (beef, turkey, or plant-based)

1 1/2 cups shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 tablespoon chopped fresh parsley (optional)


Instructions

1. Preheat oven to 375°F and lightly grease a 9×13 inch baking dish.

2. In a skillet, sauté diced onion and bell peppers until softened.

3. In a large bowl, combine cooked rice, marinara, sautéed veggies, garlic powder, and Italian seasoning. Mix well.

4. Spread rice mixture evenly in the dish. Arrange meatballs on top.

5. Sprinkle mozzarella and Parmesan over the meatballs and rice.

6. Bake uncovered for 25–30 minutes, or until bubbly and golden.

7. Remove from oven and garnish with parsley. Let rest 5 minutes before serving.

Notes

This recipe works great with leftover rice—just make sure it’s not too cold when mixing.

Feel free to add spinach, mushrooms, or frozen peas for extra nutrition.
