2 pounds Yukon Gold or Russet potatoes, thinly sliced
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups whole milk (warm)
1 cup heavy cream
2 cups shredded sharp cheddar cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and freshly ground black pepper, to taste
1 teaspoon fresh thyme leaves (plus more for garnish)
Optional: 1/4 teaspoon smoked paprika
Instructions
- Wash, peel (optional), and thinly slice potatoes to 1/8-inch thick. Soak in cold water and set aside.
- In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
- Gradually whisk in warm milk and cream. Cook until thickened (5–7 minutes).
- Stir in garlic powder, onion powder, thyme, salt, pepper, and 1.5 cups cheddar until melted.
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Layer potatoes and cheese sauce alternately, ending with sauce on top.
- Sprinkle remaining cheese over top. Cover with foil and bake 30 minutes.
- Remove foil and bake another 25–30 minutes, until golden and bubbly.
- Rest for 10 minutes. Garnish with fresh thyme and serve.
