4 cups finely chopped apples

1 cup granulated sugar

1 cup brown sugar

1 cup apple cider

1 tablespoon lemon juice

1 teaspoon ground cinnamon

2 tablespoons unsalted butter

1 tablespoon powdered pectin (optional)


Instructions

1. Peel, core, and finely chop the apples into small, even pieces.

2. In a large saucepan, combine apples, granulated sugar, brown sugar, and apple cider.

3. Bring mixture to a gentle boil over medium heat, stirring often.

4. Stir in lemon juice, cinnamon, and nutmeg. Let it simmer for 30–40 minutes, stirring frequently.

5. Once thickened, turn off heat and stir in the butter until fully melted and smooth.

6. If using pectin, stir it in according to package directions and simmer briefly.

7. Ladle hot jam into sterilized jars, leaving 1/4 inch of headspace.

8. Seal jars and process in a boiling water bath for 10 minutes or refrigerate for up to 3 weeks.

Notes

For a chunkier texture, don’t overcook the apples into a mash—leave them just fork-tender.

For a richer caramel taste, swap half the cider with sweetened condensed milk (reduce sugars slightly).
