Ingredients

2 ½ cups granulated sugar

½ cup light corn syrup

½ cup water

2 large egg whites, room temperature

1 tsp pure vanilla extract

½ cup crushed peppermint candies or pecans (optional)

Pinch of salt

Food coloring (optional)


Instructions

  1. Line a baking sheet with parchment or wax paper and prepare two spoons for scooping.
  2. In a saucepan, combine sugar, corn syrup, and water. Stir to dissolve sugar.
  3. Attach a candy thermometer and heat mixture over medium heat until it reaches 260°F. Do not stir once boiling.
  4. While the syrup cooks, beat egg whites with a pinch of salt until stiff peaks form.
  5. Slowly pour the hot syrup into the egg whites while mixing at medium speed.
  6. Increase to high speed and beat until thick, glossy, and slightly matte (about 8–10 minutes).
  7. Stir in vanilla extract and optional food coloring. Fold in peppermint or pecans if using.
  8. Quickly drop spoonfuls onto prepared baking sheet. Let set at room temperature for several hours.
