Ingredients

1 pound chicken breast, cut into bite-sized pieces

3 tablespoons cornstarch

4 cloves garlic, minced

1/3 cup honey

1/4 cup soy sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

3 cups cooked white rice

1 cucumber, thinly sliced

1 tablespoon sesame seeds

2 tablespoons chopped fresh basil or green onions


Instructions

1. Cut the chicken into bite-sized pieces and place it in a bowl.

2. Season the chicken with salt, black pepper, and garlic powder.

3. Add the cornstarch and toss until the chicken is lightly coated.

4. Heat the olive oil in a large skillet over medium-high heat.

5. Add the chicken and cook for 6 to 8 minutes, turning occasionally, until golden and cooked through.

6. Reduce the heat to medium and add the minced garlic to the skillet.

7. Stir in the honey, soy sauce, rice vinegar, and sesame oil.

8. Cook for 1 to 2 minutes, stirring, until the sauce thickens and coats the chicken.

9. Divide the cooked rice between serving bowls.

10. Spoon the honey garlic chicken over the rice.

11. Add the sliced cucumber to each bowl.
